
With Valentine’s Day right around the corner, I’m sharing some last-minute dessert ideas!
For those who know me, you know that a million ingredients is just not my style. I like quick and easy! And delicious, of course! 🙂
I wanted to put together a few of my favorite treats that are so simple and you can whip them up in no time. While these are perfectly festive for Valentine’s Day, they are so good you’ll be tempted to make them randomly on a Thursday afternoon, haha!
Let’s dive into my super easy Valentine’s Day treats!
Chocolate Chip Cookie Cups with Marshmallow Butter Cream Filling

That’s a mouthful, huh? Haha! But I promise these are SO simple and easy to throw together, and scrumptious!
I am such a fan of chocolate chip cookie dough! Every time I make no-bake cookie dough truffles, I can’t stop myself from eating two or three (or seven). I also love marshmallow! I always grab those chocolate covered marshmallow holiday treats at the store. So good! As I was racking my brain for what treat to create for this post, I decided to combine two of my absolute favorites to make this delicious combination!
With just five ingredients, these delicious cookie cups come together so quickly. What makes this recipe so great is that it tastes like you’ve slaved all day in the kitchen! Thankfully, you don’t have to and you can get these done within 30 minutes and move on to the next thing on your to-do list!
My husband snuck a couple of these after he got off work yesterday and he really liked them!
Ingredients:
- 1 Package of Nestle Chocolate Chip Cookie Dough (I used the squares)
- 1 Cup of Jet-Puffed Marshmallow Creme
- 1 Cup of Betty Crocker Whipped Butter Cream Frosting
- Ghirardelli Premium Chocolate Sauce for Drizzle (Optional)
- Great Value Heart Sprinkle Mix for Decoration (Optional)
Instructions:
- Preheat your oven to 350 degrees,
- Grab a muffin tin and place one cookie dough square for each cookie cup you want to make.
- Bake for approximately seven minutes, but keep an eye on these! I baked for ten minutes initially, and they came out edible, but a little hard.
- While your cookie cups are baking, start making the frosting. Mix one cup of marshmallow creme and one cup of butter cream frosting in a small bowl. For a thicker frosting, you can add some confectionary sugar!
- When your cookie cups are finished baking, use a spoon to press down lightly in the middle of each cookie cup. Then, carefully slide them out of the muffin tin and place onto a wire rack to cool.
- Once cooled completely, you can add in the marshmallow butter cream frosting in the middle of each cup.
- Top with chocolate drizzle and festive sprinkles if you like!
P.S. The heart sprinkles are very pretty and definitely fun for the holiday, but I do have to be honest that they were really hard! So you may want to use a different brand for the sprinkles!
Personal Heart-Shaped Charcuterie Boards

Charcuterie boards have really taken off! You see them everywhere and for good reason – not only are they beautifully assembled, but are perfect for snacking (and sharing!).
I initially thought about making a large, heart-shaped board filled with goodies to share with your significant other or even your gal pals for a fun party. But then, I realized it would be a very sweet, personalized treat to put together a mini version for each person. Thus, their very own Valentine’s Day themed charcuterie board for them to devour!
I found these small, white foam hearts for my little Valentine’s Day charcuterie board. Then, I covered the top with parchment paper. I really wanted small wooden ones, but they were fresh out of those when I went yesterday. So I totally improvised and made it work! If you were planning to gift these, I’d definitely recommend wooden ones or even a nice plastic heart-shaped plate/gift box, since these foam hearts are quite flimsy!
I used a mixture of the following: Reese’s Peanut Butter Hearts, Twizzlers (I cut into bite-sized pieces), M&M Minis, Ferrero Rocher (my favorite!), Oreo Thins, Fannie May Buckeyes (these are good, but go for homemade are way better!), my Chocolate Chip Cookie Cups, and DeMet’s Mini Turtles.
Mine is not fancy, haha! But I wanted something that would fit in this super easy Valentine’s Day treats post. Truly, you can make these personal-sized dessert charcuterie boards any way you like, as fancy or as casual as you want. That’s the fun part! 🙂
Angel Food Cake With Strawberry Icing
Okay, so I didn’t put make this one for today’s post, but it’s SO simple and I’ve definitely made enough goodies for Kyle to kick me out of this house for because he’s dieting, haha.
My parents have been doing this for years and it literally requires no baking whatsoever, which is awesome if you’re pressed for time or just want a yummy treat without all the hassle.
You can buy an angel food cake already made from your local grocery store. They usually have them in loafs or in Bundt pans. I prefer the loafs just because they’re easier to frost, but that’s just my preference! Then, you can buy your favorite strawberry icing from the baking aisle to top your angel food cake. Serve with fresh strawberries and viola, you’re done!
If you’re in the mood for chocolate cake instead, my chocolate mayonnaise cake would be great for Valentine’s Day!

![Thoughts on 2020 & My Word for 2021 BEFORE READ-MORE Let’s be honest, 2020 was a tough year! I had a whole lot of beautifully-laid out plans that unfortunately just didn’t happen. Partly because of the pandemic, and partly because of my mindset. I found myself just sort of depressed and couldn’t really find the motivation I needed. Thankfully, ever since the holidays, I’ve felt like this universal shift is coming and things are going to be so much brighter this year. I’m definitely pouring all of my positive energy into making my goals happen this year, no matter what things look like with the pandemic. I have to realize that it’s not within my control what happens in the world. I just have control over myself. I wanted to share with you my biggest takeaways from last year. I want to stay mindful of these three things during 2021, and beyond. Plus, I’ll be sharing my word for this year at the bottom! Take Care of Your Loved Ones This past year tore us away from our family and friends. It was heartbreaking for so many, especially to those who are now grieving over some of them. As each year passes, it is almost always on my mind that some of my loved ones may not make it to see another year. That probably sounds very morbid and daunting, and is probably just a result of my life experiences. But it has opened my eyes to really pay special attention to those I love the most. I want to show them that I care while they are here. I want them to know without a doubt that I’m there for them and will do anything in my power to help them. I work very hard to not take anyone for granted because we never know when our time is up. Protect Your Peace I learned how important protecting my peace was last year. I felt like I was going through a multitude of things. Some of the things that were bothering me the most, I couldn’t even control and didn’t directly involve me. They involved loved ones. I’m sure many of you have had similar situations where you have family members that can sometimes play a toxic role in your life. As a result, I really needed to rely on creating healthy boundaries and sticking to those. It’s an ongoing difficult situation for me, but I have truly handled it better than I ever have before. I hope to continue to grow in this area and get better with those healthy boundaries. Try to Control What You Can Control (Not What You Can’t) This one is pretty much directly tied to what I just mentioned about protecting my peace. I’ve spent so much time (that I can never get back) stressing myself out over things I can’t control. Mostly in regard to loved ones, but also the world as a whole. While I choose not to talk politics in this space, I think we all can agree that things have just been a mess in the United States for the past year and even right now. The pandemic, the mud-slinging, all of the sad news that’s plastered all over the tv or our social media...it’s just exhausting. I just had to cut out most of the news because it was so depressing. Short of voting and praying for things to get better, that’s really all I can control. The rest of it will be what it will be, and I’m really trying to remind myself that each day. My Word for 2021 is Growth I’ve been flip-flopping between ‘change’ and ‘growth’ for my word this year. I realized what I wanted for this year was way more like ‘growth’ than ‘change.’ My thought process on using ‘change’ was that I was creating these new habits that were going to be life-changing and help really boost me to achieving my goals. When I thought about it a little more, I realized ‘growth’ really summarizes what I want to embody this year the best. It still requires change to happen, but it just seems like a better fit to choose ‘growth.’ [PIN] I hope you’ve gained a little something from reading this post, friend.
