It’s Friday the 13th! Cue the movie marathon! Maybe I’m the only one who used to look forward to those. 🙂 Let’s dive into my Friday Favorites for this week.

1. Smothered Chicken Recipe

 

My husband and I loved this smothered pork chops recipe for the crockpot that I made a few weeks ago. Kyle wanted to me to try the same recipe with boneless chicken breasts and it was a hit! The gravy is just super delicious, creamy and salty. I did a reduced sodium cream of chicken with this one because with the original, it was too salty for us.

I served this over no-yolk noodles boiled in chicken stock and corn on the cob. The gravy is perfect with mashed potatoes if you have some of those handy.

 

2. Farmer’s Market

 

I’m beating myself up for not going to our local farmer’s market sooner! The veggies are so fresh and delicious, as well as far cheaper than my grocery stores. Plus, we are supporting local farmers! My favorites to buy each weekend are bell peppers, cucumbers, tomatoes, red potatoes, green beans, and corn on the cob.

Have you tried the Parkay Squeeze Butter? Not probably a healthy option, but it’s so yummy with the corn on the cob!

 

3. Spending Time with Family

 

Do you have family members that you don’t get to spend much time with, but always enjoy it when you do? I was able to catch up with my cousins earlier this week and had a wonderful time. It served as a great reminder to carve out more time for family.

 

4. Pinterest SEO

 

For those of you who are bloggers, you know exactly what I’m talking about. It’s such an important topic, and I’ve really neglected my Pinterest boards for too long. I started researching and gaining more information from bloggers in Facebook groups I’m a member of.

I learned that sections are NOT good for SEO, and that I need to apply lots of good keywords to all of my Pinterest boards, NOT hashtags. A couple of fails for sure, but I’m so thankful I’m getting it fixed now.

 

5. Scheduling Social Media with Later

 

I wish I had found this blogging tool sooner! Being able to schedule my Facebook and Instagram posts ahead of time has been so helpful. I used to wake up super earlier to post things and now I can just pick the time I want things to post, and viola! 🙂 I know that not everything being automated is a good thing when it comes to blogging, but this has truly helped a bunch!

So I whipped up my favorite quick and easy chicken tortilla soup, and it really hit the spot! Warm, comforting, and perfect for nights when you want something delicious without spending all evening in the kitchen.

🥣 Chicken Tortilla Soup — Stovetop
 
Ingredients
• 1 lb boneless skinless chicken breasts (cooked — diced or shredded)
• ½ cup diced yellow onion
• 1 tsp minced garlic
• 1 (15 oz) can chicken broth
• 1 cup water
• 1 (15 oz) can corn — undrained
• 1 (10 oz) can original Rotel — undrained
• 1 (10 oz) can enchilada sauce
• 1 envelope taco seasoning
• ½ tsp chili powder
 
Directions
Add everything to a pot on the stove, mix well, and let simmer for 1 hour. The flavor gets even better the longer it sits, but since everything’s already cooked, it’s ready once heated through!
 
Top with tortilla strips, cheese, sour cream, or whatever your heart desires. 🤤 I love to serve this soup with cheesy garlic bread!
