It’s officially the first day of summer, friends!
Whether you’re looking for summer recipes for your weeknight dinner, a quick lunch, a church potluck, or a family get-together – you’re in the right place! As I was browsing through some blog post ideas, I thought it would be a fun idea to share a roundup of my favorite summer recipes with you!
I’m sure I’m not the only one who is chronically wondering what we are going to have to eat every single day for the rest of my life, haha! š
Some of these recipes are my own, and some of them I’ve found from other sweet bloggers that ended up being added into regular rotation in the Burchett household. I don’t have all of my recipes uploaded in separate blog posts (need to work on that!), so some of them will just be down in this post underneath each recipe name.

Mix & Match Mama’s Corn Salad

This is one of my favorite recipes to take to family gatherings! This corn salad recipe only six ingredients, but is packed with deliciousness! The only thing I do differently from her recipe is that instead of mixing in the Fritos, I actually leave them to the side so they don’t get soggy. I buy two bags of Fritos, one regular Scoops bag, and the other chili cheese flavored, and just sit those beside the corn salad bowl.

Chocolate Mayonnaise Cake

I’ve said it before and it still rings true at this very moment I’m typing this: meet my most popular blog post ever! While I would love to give the post a little refresh this year, this cake recipe is so easy to whip up and I always get compliments and requests to make it again. It is a chocolate lover’s dream, yet it is light and not overly rich. I top it with my chocolate cool whip icing, but you could also use buttercream if that’s more your style! I know it isn’t the prettiest cake the way I frost it, but it’s still delicious, haha!
Gooey Butter Cookies

My favorite cookies I’ve ever made are these soft, melt in your mouth gooey butter cookies! These are a must-make during the holiday season, but because they are super light, they are also perfect as a summer recipe too! I made these for some of my husband’s coworkers and one of them even asked me to make some for her family, which made my heart so happy.
Bacon-Wrapped Smokies
I make these little smokies (cocktail sausages) multiple times each summer! These are the quickest appetizer to bring to a get-together or even if you just want something at home.
Ingredients: 28-ounce package of Hillshire Farm Lit’l Smokies, 12-ounce package of Oscar Mayer Center Cut Bacon, and your favorite brand of Light Brown Sugar [I just use Walmart’s Great Value brand].
Instructions: Spray a 9×13 baking dish with cooking spray and preheat your oven for 350 degrees. Grab a cutting board and use it to lay out your bacon, then cut into small strips that will cover each little smokie. I usually get three small strips from each slice of bacon. Continue until you can have rolled all of the little smokies in bacon and place them into your baking dish. Sprinkle with light brown sugar and bake for 30-35 minutes in the oven.
Sweet BBQ Meatballs
Our little niece loves these sweet and savory meatballs! I love this recipe because it’s just a few ingredients (isn’t that just the best?!) but so tasty, and because the crockpot does all of the work, I can just dump everything early in the morning and by the afternoon, they’re ready to devour!
Ingredients: 32-ounce package of Frozen Homestyle Meatballs [I use Walmart’s Great Value brand, but use your favorite!], one cup of Welch’s Concord Grape Jelly, one cup of Sweet Baby Ray’s Barbeque Sauce.
Instructions: Dump all three ingredients in your crockpot and mix thoroughly. You can set it on low for four hours or if you need these cooked faster, you can set it on high for two hours. It’s that simple!
Loaded Baked Potato Casserole

If you want a comfort food for your 4th of July picnic, family reunion, or just a yummy side dish for a Sunday dinner – this casserole recipe is perfect for you!
Ingredients: 30-ounce package of Ore-Ida Shredded Hashbrowns, (2) Hidden Valley Ranch Seasoning Packets, (2) 16-ounce containers of Daisy Light Sour Cream, 8-ounce package of Kraft Shredded Cheese, 3-ounce package of Oscar Mayer Real Bacon Bits [the soft kind, not those crunchy bits].
Instructions: I recommend letting the hashbrowns thaw in the fridge overnight – it really helps you mix all of the ingredients better! Preheat your oven to 350 degrees. First stir together the sour cream and ranch seasoning, then mix in the remaining ingredients. Apply cooking spray to a 9×13 baking dish and pour mixture into dish. Bake for 45 minutes and enjoy!
TikTok Chopped Italian Sandwich

This is an absolutely delicious recipe as is, but I love the fact that you can really just use the deli meats and veggies you prefer to make tasty sandwiches! My husband prefers to eat this as a salad to save some calories/carbs. I leave out the mayo and the dressing is still perfect! I use the Skinny Girl Italian Dressing.
